Spicy Creamy Cajun Chicken and Pasta Recipe

I love going out to eat, but it can be quite expensive.  It is a rare occasion for us to have a night out and so I am always trying to recreate those great meals so we can have them more often.  Here is a recipe I came up with after eating out at a local Italian restaurant.

You will need the following ingredients:

  • Chicken Breasts
  • 1 lb. Box of Your Favorite Pasta
  • Spices: Salt, Pepper, Garlic Powder and Cayenne Pepper
  • Green Peppers
  • Onion
  • Butter
  • Flour
  • Milk
  • Ranch Dressing
  • Cheeses:  Parmesan and Swiss, or your favorite

Bake 2-4 Chicken breasts seasoned with salt, pepper, garlic and cayenne pepper.  Once cooked, cut into thin strips.

Prepare 1 box of your favorite pasta (you may not use it all as it depends how much sauce you make and how creamy you like your pasta).

Slice 1-2 green peppers and 1 large onion and saute in a bit of butter.

Melt 1/4 C. butter and add 1/4 C. flour and cook over medium heat to make a roux.  (Double this if you like extremely creamy pasta.)

Add salt, pepper, cayenne pepper and garlic to taste. Don't be stingy on the spices as you want your roux to have a good flavor.  (My children like spicy food, but if yours do not then skip the cayenne pepper and sprinkle it on when it is served.)

Stir in 2 C. milk and cook until thick. (If you doubled your roux you will need to add more milk.)

Add a bit of ranch dressing: about 1/8 - 1/4 C.

Next, stir in Parmesan cheese and a bit of Swiss if you have it on hand.

Finally, add the sauteed green peppers and onions, the cooked chicken and pasta.  Garnish with a bit more Parmesan or Swiss cheese.

This is one of our family favorites and is quite easy to make, but tastes amazing.  Your family and friends will think you slaved in the kitchen all day, or better yet, that you cheated and brought in take-out!
