I have a child who hates rice. This can be problematic [for the kid, not me - my philosophy is you don't have to eat it, but you go hungry]. I came across this recipe a few months back and tweaked it a bit and to my amazement my picky rice eater didn't balk at eating the fried rice. I heard from this same child who would normally gag on just one spoonful of rice say "This is good!" I almost fell out of my chair.
What I love about this recipe is not only that it tastes great and is quite inexpensive to make, but unlike those fried rice packets or boxed meals you find in the grocery store one can actually pronounce all the ingredients without a degree in bio-chemistry. Enjoy.

Fried Rice
1 C. Rice, rinsed
2 C. Water
1 Onion, Chopped
2 Stalks Celery, Chopped
1 Carrot, Grated
Soy sauce, garlic powder, ground pepper to taste
2+ T. Oil
First, bring the water to a boil and then add the rinsed rice. Stir, reduce heat to simmer and cover. Let cook for 17 minutes. You may need to lift the cover a couple of times in the first few minutes so the rice doesn't boil over. Once it has cooked, let cool for a few hours in the fridge - though I have fried the rice right after cooking when I forgot to cook it earlier in the day.
Finely chop the onion and celery and grate the carrot. Fry in 1 T. oil until tender. Add more oil (I may use another 2-3 T. of oil) and the rice and continue frying. Then I add at least 1 t. garlic powder, 1/2 t. freshly ground black pepper and 1 T. soy sauce. I probably use quite a bit more seasonings, but just taste the rice and if you think it needs a bit more flavor add more of the spices and soy sauce.
And there you have it. An extremely flavorful fried rice, that is nutritious and inexpensive. I usually double the batch as it reheats well and the one batch gets completely devoured at the supper table. I hope you enjoy this recipe as much as my former picky rice hater and the rest of my family does.
