Pasta Salad with Imitation Crab and Peas


Due to the fact that our home was on the market for almost 8 weeks and I was spending every day cleaning, boxing our stuff up and trying to homeschool I rarely posted anything.  Well, after almost 40 showings we received an offer!  Yay, but I am still a bit stressed.  We are literally living out of boxes, much of our furniture is still in the old home for staging purposes, our kitchen is only half done and everything that would normally be stored in a basement until needed (ie Christmas decorations, bins of clothes, canning items, etc.) is sitting in a room until we get the basement brickwork tuck-pointed.  As with most pre 1900 houses there is so much which needs to be done.  And so I really do not have time or the mental energy to write up an intricate recipe, but this pasta salad is quick and easy to make and so I thought I should post it.  Plus it tastes really good if I do say so myself.


Pasta Salad with Imitation Crab and Peas


8-12 oz. Pasta of choice - I like the small shells
1 Package of Imitation Crab cut into small pieces
1 C Peas - more or less to your liking
Approximately 1/2 C of Chopped Onions or Green Onions - I use what I have on hand or what is in season
1-2 Stalks of Chopped Celery (if desired)
Mayonnaise
Lawry's Seasoning Salt
Pepper and Garlic for taste

Cook your pasta to desired firmness, drain and let cool.  In a bowl mix the pasta and mayonnaise.  I never measure the mayo, but I think I use a little over 1/2 cup.  Next season with the Lawry's Seasoning Salt.  Again, I do not measure but I think I use about 1/2 tsp. or so.  Add the peas, onions, celery and crap pieces.  Let the salad sit in the refrigerate for an hour or so.  You may need to add more mayo and more seasoning.  Sometimes I also add freshly ground pepper and garlic to add a bit more flavor.
