Double Chocolate Chip Banana Muffins Recipe

Almost weekly I purchase bananas.  My children, who I admit are a bit odd, love them when they are green and will eat them when they are a bit yellow, but absolutely hate bananas when they get a bit of brown anywhere on the skin.  So, usually I have a banana or even a half of a banana left and I toss it into the freezer skin and all.  They turn a nasty black, but I think bananas in the freezer have more of a flavor when used in my baked goods.  In a few weeks I have enough frozen bananas to make banana bread, banana cake or these muffins.  I let the frozen banana-sicles thaw for a couple of hours in a bowl and cut off the ends and then I squeeze out the slimy innards into my mixing bowl. What I especially like is I don't have to mash them!  

This muffin recipe I received from a neighbor and friend.  What I love about it is how easy it is to mix together.  Also, the muffins not only taste amazing hot out of the oven, but a few days later they are still quite good.  And, they are semi-nutritious.  Well, better than a doughnut anyway!


Double Chocolate Chip Banana Muffins
  • 1 1/3 C Mashed Bananas (about 3)
  • 1 Egg
  • 1 C Sugar
  • 1/3 C Oil (I use less and add some homemade apple sauce)
  • 1/4 C Cocoa
  • 1 1/2 C Whole Wheat Flour
  • 1 t Soda
  • 1/2 t Salt
  • 1/2 t Cream of Tartar or 1/4 t Baking Powder
  • 1 C Chocolate Chips (I am stingy so I probably use about 1/2 C)

With this batch I made 15 mufins.
I keep my baking ingredients in old glass jars.  

Mix the wet ingredients together for a minute or two.

Add the cocoa and mix well.

Incorporate the dry ingredients, but do not over stir.

Fold in the chocolate chips.

Line muffin tins and fill 2/3 full with batter.

This makes slightly more than 12 muffins.  Bake at 350 for 20-22 minutes.  I love these right out of the oven, but they are great the next day.  They also freeze well, but that almost never happens in our home as they are gone within 24 hours.

muffins with the scent of lilacs in the air.
I love spring.
