Fresh Salads from the Garden

It's a sad day for me - I think we may have had our last fresh salad from the garden.  We've had an extremely cool summer and the leafy greens have been growing well, but the spinach ended about 3-4 weeks ago and I picked the last of the lettuce last week.  I am not a huge fan of salads, but there is something about picking the vegis right out of the garden and tossing them together.  

My favorite mix this summer was to rip the lettuce and spinach into bite size pieces, shred some carrots, chop up some green onions, throw in a few sliced white onion, top with some cheese and drizzle on a bit of dressing.  I could eat the whole bowl myself.  Yum.

















Cucumber Salad:
Another favorite fresh salad I love to make is a cucumber salad. Super simple, but extremely yummy and tastes so good on a hot day.

All I do is slice a few cucumbers, sprinkle them with a bit of salt and freshly ground pepper and then add a tiny bit of ranch dressing and I mean a tiny bit.  Probably no more than 1-3 teaspoons per bowl.

I have never been a great fan of cucumbers, but I love this salad and so do all of my children.  They almost fought over this bowl and I had to go out to the garden and pick the last of the cucumbers to make another salad for myself.  Next year I will definitely have to enlarge my garden so I won't run out of my favorite vegis before the end of summer.
