Best Ever Whole Wheat Peanut Butter Cookies



I have always had a soft spot in my heart for Cookie Monster.  Like him I am unable to stop at just one cookie or even a few.  I can eat a whole pan with ease and so I try not to make cookies too often, but when I do I often make these Whole Wheat Peanut Butter Cookies.

This recipe comes from my Nutrimill recipe book and I changed two things: I cut the recipe in half (only because I would eat them all!) and I use Wal-mart peanut butter as that is what I have on hand.  The Great Value Creamy Peanut Butter works great in these cookies.  They truly are amazing.


Ingredients for Whole Wheat Peanut Butter Cookies
  • 3/4 C Butter
  • 2 C Sugar
  • 1 1/4 C Peanut Butter
  • 2 t Vanilla
  • 2 Eggs
  • 2 1/2 C Whole Wheat Flour
  • 1 t Baking Soda
  • 1/2 t Salt - if using unsalted butter

Cream the butter and sugar.  Add the peanut butter and cream.  Next add the vanilla and eggs and mix well.  Last stir in the flour, baking soda and salt (if not using salted butter).

Drop the cookie dough onto your cookie sheets (I use a cookie scoop) and flatten with a glass dipped in sugar.  Use a fork to make the design on your cookies and then sprinkle with a bit more sugar if desired.

Bake at 350 for 6-9 minutes depending on the size of your cookies.  

These are quite wonderful hot out of the oven, but they store and freeze well and taste great for days.  Though to be honest they never last more than a couple of days in our home as these cookies are quite literally the most addicting cookies I have ever eaten.
