This is my second week challenging myself to only spending $50 per week on groceries. I looked at the local grocery store adds and there really was not a great sale at any of them, but I needed hamburger and milk. At Wal-mart I purchased my 4 gallons of milk, mushrooms, celery, pickles (this summer I am going to grow cucumbers and will attempt to make my own pickles) and flour (I grind my own whole wheat flour, but now and then I like a bit of white flour) and then I came upon a sale on Folgers coffee and so I purchased 2 of those. My total at Walmart was $40.78. The milk came to almost $15 (boy is this a killer on my budget and I am not going to stop my kids from drinking milk and of course a 1/2 gallon goes to yogurt making) and the coffee was almost $14 for 2 containers.
I didn't have much left for meat, but I headed over to the local grocery store (I refuse to buy meat at Wal-Mart) and bought 3 lbs for $6.84 (not a great sale, but I haven't found hamburger under $2 a pound in years and this at $2.28/lb is about as good as it gets) and then I hit the mother load of grocery deals. They had discounted 8 oz. cream cheese to 2 for a buck!! They were close dated (April 11th), but I have frozen cream cheese before and it can get a bit grainy, but it doesn't bother us - it still tastes the same. I called all my friends and my sister and between all of us I purchased 30 bars of cream cheese. Plus I received a free jar of spaghetti sauce with a coupon. Not bad: 3 lbs hamburger, 8 bricks of cream cheese and a jar of spaghetti sauce for a little over $10.84 (this doesn't include the 20 bars I bought for my friends as they paid me back), but I did go over my limit and spent $51.62 at both stores. Though last week I spent much less than $50 so I am still on track for the month.
Next week I believe I will have to make a run to Sams Club as I will need shredded cheese and chicken breasts (if a local store does not have a sale). So until then, wish me luck.

Sunday - We had our Easter meal at my sisters and were so stuffed it was fend for yourself night. I ate tons of my homemade bread and the kids ate hard boiled eggs and candy.
Monday - Sloppy Joes on my homemade buns, baked seasoned potatoes and green beans (the last from my garden).
Tuesday - Sloppy Joes or Egg Salad (made from our Easter Eggs), Homemade Rice-a-Roni and Frozen Vegis
Wednesday - Sweet and Sour Chicken and Fried Rice with Vegetables
Thursday - Left over Sweet and Sour Chicken and Fried Rice
Friday - Yummy Casserole (A homemade baked pasta I came up with, but couldn't think of a better name than Yummy, because, well, it's yummy! Recipe to be posted in the future.)
Saturday - Burrenchilaco or Enchurrito* (see below)
Along with my usual whole wheat bread, this week I also made a no knead bread, but I used 100% whole wheat (freshly ground of course), 1/3 C Gluten and 1/4 C Molasses.
For a dessert this week the kids finished up my "Peep" cupcakes, I made a brownie and frosted it with the frosting I used to make the cupcakes - My husband said it looked like cheese sauce on top of brownies (he didn't think that would be a bad thing!) and I made a batch of oatmeal cookies for my oldest to take to a weekend sporting event.
*I suppose you are wondering what is a Burrenchilaco or Enchurrito? Well, 3 weeks ago (before I started my challenge) I purchased a huge stack of white corn tortillas for $3.00. We have had enchiladas, burritos, tacos and quesadillas and I still have some left. So Saturday I made refried beans, black beans, taco meat and an enchilada sauce. First, I spread the refried beans onto the tortilla, added the taco meat, then sprinkled on the black beans and some corn and topped it off with cheese. I then place them in a pan with the enchilada sauce. One problem I had was the tortillas were brittle and would not fold nicely, so I just set them against each other and they looked like tacos and baked them that way. When it was time to eat the family asked what it was? It kind of looked like tacos, but it had enchilada sauce, the tortillas were corn (not flour) and it included refried beans. So what to call it? I hadn't made burritos, or tacos or enchiladas and so we had fun coming up with names for the meal and the two best were Burrenchilaco or Enchurrito. I suppose you are wondering if they were good? And yes, they were. We even had them for lunch after Church on Sunday.
